High Protein Lemon Blender Loaf

This bread is high protein, low carb and low fat. It is a super macro friendly snack to keep on hand and couldn’t be easier to make. It will be a go to grab to complete any meal or snack with a sweet note.

I love the lemon in this as it keeps it super moist (i know cringe word for some). It is packed with flavor and comes together in minutes with a few simple ingredients. Finally, everything is tossed right into the oven from the blender.

This bread is super easy and comes together by tossing everything into a high powered blender

  • High Protein Lemon Blender Loaf
  • 1 Lemmon Cut into 4 wedges
  • 1 heaping tsp Baking Soda
  • 3 tsp Vanilla (measure with your heart)
  • Pinch of Salt (I use Redmond’s Real Salt)
  • 1 Cup Egg Whites
  • ½ Cup Old Fashioned Oats (I use Terra Soul Organic Gluten Free)
  • 1 Cup Protein Powder (My fav is Legion Whey Vanilla in this recipe but have also used vegan and beef protein with success)
  • ¼ Cup Coconut Flour (I used Terra Soul Organic)
  • ½ Cup Monk Fruit/Erythritol Blend (I used good Earth)…Could also sub granulated Allulose
  • For the Glaze:
  • ¾ Cups powdered Cup Monk Fruit/Erythritol Blend (I used good Earth)…Could also sub granulated Allulose – Can buy or put granulated in coffee grinder, food processor or blender…I did mine in my coffee grinder.
  • 2-3 T of Lemon Juice
  • Blend all bread ingredients on high until smooth. Pour into lined bread pan and Bake at 350 for approximately 30 min – cover with foil half way through to prevent browning
